“The Ravioli are made with a green dough with white flour, spinach and eggs. The filling is fresh ricotta with the flavour of the lemon and parmesan cheese. The Crostata is a traditional Italian cake in this recipes filled with fresh ricotta and chocolate bits.

INGREDIENTS
Green Lemon Ravioli and Butter Lemon Sauce and Pistachios
For the green dough:
- 300 gr of white flour
- 2 eggs
- 100 gr of spinach
- Salt
- Olive oil
For the filling:
- 250 g of fresh ricotta
- 3 tablespoons of parmesan
- Lemon zest
- The juice of half lemon
- salt
For the sauce:
- 50 gr of butter
- 2 minced shallots
- The zest of 1 lemons
- Juice of 1 lemons
- 1/2 cup chopped and
- shelled pistachio
- salt
- pepper
- Basil leaves
- Grated Parmesan
What to do in advance
- Bring a large pot of water to a boil. Meanwhile, fill a large bowl with cold water. Add rinsed and trimmed spinach and cook 15-30 seconds. Drain and plunge spinach into bowl of water. When spinach is cold, drain and spin in salad spinner. Using a hand-blender or food processor purée the spinach until smooth
Crostata with ricotta and chocolate bits
For the piecrust
- 300 grams of white flour
- 150 grams of butter
- 120 grams of sugar
- 30 grams of cocoa
- 2 eggs.
- The filling
- 500 grams of ricotta
- 100 grams of sugar
- 1 egg
- 100 grams of chocolate bits
