“Casoncelli” is a typical traditional dish from Brescia and Bergamo in Northern Italy: they are stuffed ravioli with a distinct flavour, which comes from filling made with breadcrumbs, parmesans and herbs. Their name derives from the Latin word “caseus” which means “cheese”. We will serve with butter and sage sauce. The Strawberries and Mascarpone Roll is a light sponge with strawberries and a potently rich mascarpone cream.

Casoncelli with butter and sage
For the dough
- 300 g of “white flour
- 3 eggs
- salt
- olive oil
For the filling:
- 75 g of breadcrumbs
- 60 g grated Parmesan cheese
- 100 ml of meat or vegetable broth
- 50 g of butter
- 2 cloves of garlic
- 5 g of chopped parsley
- salt and pepper
- Nutmeg
For the sauce
- 40 grams of butter
- Sage leaves
- Grated parmesan
What to do in advance
- Prepare 100 ml of meat or vegetal broth
Strawberries and Mascarpone Roll
- 120gr of white flour,
- 120gr of sugar
- 4 eggs
- 400 g strawberries
- 20 gr sugar
- 20 ml of water
- 250 gr of Mascarpone
- 150 gr of whipping cream
- 30 gr powdered sugar
What to do in advance
Cut strawberries in small cubes and cook with 20 grams of sugar and 20ml of water for 10 minutes.When the class will start the strawberries have to be cold.
